Once the fruit is placed on the stainless-steel trident and pinned by the upper arm just let it peel. That said, the cutting edge is guarded by the thickness gauge, and the machine is operated hands-free. Like any cutting tool, proper caution is advised. We like to use half the double pass, see the above-attached video for this technique. Peel up to three fruits or vegetables per minute, we have never tested a better peeler! The peel depth is adjustable and comes factory set for citrus and pomegranate, but can be adjusted thinner for kiwis and peaches to minimize waste and provide the most of your favorite foods. We're sure there are other veggies (potatoes and apples) it will work on we just have not discovered them yet. We use it on oranges and grapefruits and pomegranates too. We find it a pleasure to use and clean but most of all it speeds us up.
